"Layla" and "Hotel California" are definitely on my list. My list is ever changing. It just depends on my mood and whether I want a dancing song, a driving song, a relaxing song, etc. I would add "At Last" by Etta James, "Smells Like Teen Spirit" by Nirvana, "Enter Sandman" by Metallica, "The Chair" by George Strait, "Little Moments" by Brad Paisley, "Brown Eyed Girl" by Van Morrison, "Sweet Home Alabama" by Lynyrd Skynyrd and finally "I'll Be Home for Christmas" which has been recorded by many different people.
